Soup Season

It snowed this week, so what does that mean? Baby girl and I are staying indoors for a few months, and we will be eating soup to stay warm. I thought I would share two of Mike's family soup recipes that are YUMMY! Both of which are not very healthy, but are super tasty. Please share with me your fav soup recipes...I want to make a new soup each week. (BTW I modified both soups to make them gluten free.)
(Zuppa)

Zuppa (Olive Garden style soup)

1lb Mild Italian sausage
1lb Hot Italian sausage
1/2 lb Bacon
1 Medium onion-diced
Brown above ingredients and drain oil.
Then add 4 t of minced garlic

At the same time boil in a large pot and add
3 qts water
12 chicken bouillon cubes (GF add 3 T of Better than bouillon)
4 large potatoes thinly diced

Add meat mixture and Boil for 5 minutes
Then add two kale leaves-chopped
Boil for one more minute and remove from heat.
Add 1 Cup of Cream.
Done. Enjoy!

(Chicken Cheese Chowder)


Chicken Cheese Chowder
1 C onion-diced
1 C carrot-diced
1 C celery-diced
1/2 cub of butter
Cook in pot until tender
Add 1/4 flour (Gluten Free add 1/8 corn starch)
2 C chicken broth
Bring to a boil -should be thick
Reduce heat to low
2 C half and half
1 t salt
1/2 C shredded cheddar
2 C shredded chicken
Done. Enjoy!
